Are these tiny roots edible? My home grown ginger has lots of them and it seems a shame to throw them out if they're edible.

Although white ginger and red (or pink) ginger do exist, the different colors in sushi ginger are from a dye. The color in white sushi ginger comes from the pickling process and the red/pink color in ink sushi ginger comes from an artificial dye (usually E124 -cochineal red- or in other brands beet extract). The generic name for sushi ginger is gari and here's the Wikipedia page.

There's no reason to peel besides the aesthetics of it. There's no major flavor or nutritional difference either way. If the ginger is going to be seen then peel it, if not don't bother.
The best way to peel ginger is to use the edge of a small spoon to rub it off, it works really well, takes seconds, and doesn't waste as much as using a knife or peeler.

Given that you can eat most of the rest of the plant, it is likely that they are edible.
Note that edible != palatable. I can't find any references indicating that they are eaten anywhere. It may be that they have a texture that is odd or are just not flavourful in any way.
