Cookies – use parchment paper for all cookies

English toffee is very chewy - the kind of stuff that glues your teeth together! Once it has been cooked and set, it's not easy to handle and wouldn't be easy to chop up for a cookie recipe. You'd possibly be better off with some kind of fudge which is easier to handle but will still hold its shape in a cookie.

You can reuse parchment paper several times for your cookies (it also works for other dry dishes), depending on cooking time and temperature, with no problem. Change the paper when it gets dirty, dark and/or brittle as it may crumble beyond this point. I always do so with no difference in the results, saving both on money and waste.
