Yes, it's definitions possible that the black with white stripe is the same as blue. Though you might find that the black is blue, and the black with white stripe is black.
In either case it won't matter, if you get it wrong you'll just have to switch them.

You'll see the black/red, white and ground wire connect to the remote module. The remote module should connect to the fixture with a black, blue, white, and bare/green wire.

- Connect the white wire from the ceiling to the white wire from the fixture.

Nope, the HB fans have a single power wire, so only 1 switch will work.
