How should you set these bases into concrete?
Do you push them all the way down? Or should you leave a gap underneath? If you leave a gap, how big a gap should you leave? It has drain holes on the bottom, which makes me think it needs to be off the concrete, but then you have the full weight of you 6×6 post on that one piece of steel.
What's the proper/best way to set this into concrete?
I have only done this once before and I have no idea if it is the correct way but we just poured the concrete onto the floor (shaped so it was cented where the tub bottom is) and then squished the tub into it before it dried.
The main con is that since its designed to be driven down, the tapered tip will offer less torque, even set in concrete, than a post set to a similar depth.
Another consideration is frost heaving. The bare adapter should not heave, but the combined concrete/adapter might, unless the pour goes below the frost line. This can be mitigated with SONOtubes use.
I wonder if using 2 ez-mender, set in concrete, might not give a more stable base.

That base goes into a hole drilled into a concrete slab, and is then attached with epoxy. The base of the bracket bears on the cured slab. Follow the epoxy manufacturer's instructions regarding hole clearance and cleaning procedure.
