I got as far as putting in anti-rotation block and screwing in latch when door was pushed closed and now I cannot open it up in order to complete the privacy door knob installation. Luckily I was not inside the bathroom. But now door is stuck and I cannot open it back up to complete the install. Argh.

A door magnet latch like this will work. If the wind is heavy, use more than one.
You're going to have to drill a larger hole for the new handles, which should completely encompass the old hole.
Head on down to your local hardware store (or cruse the internet), and look for a door handle installation jig like this Irwin® Door Lock Installation Kit

It comes with the proper size hole saws to set up a door for modern locksets, and makes alignment of the holes quick and easy. Simply attach the jig where you want it, and drill the holes with the supplied hole saws.

Never mind! Figured it out. Add knob and turn...lol. Well originally tried that and it wasn’t catching. Apparently I did not have spindle pushed all the way in tight and in place.
