I'm struggling finding a power source for the cabinet lighting in our remodel. The breaker box is very full and I'd rather not re-wire/double up breakers are this time.
Is it ok to pigtail off of one of the LINE inputs of a 20A kitchen GFCI?
These are all LED lighting, which I've read about the issues with GFCI cicruits and LEDs on the load side. Hence, pigtail off of the LINE side.
It would be fed into a metal 4×4 box and conduit.
There should be no problems with extending the circuit as you suggest. Install another box where you need it, run the cable between the boxes, and hook everything up. I'd contact the local building department, and ask them if they would consider cable run on top of cabinets to be "subject to physical damage". I wouldn't think so, but not all jurisdictions are the same. If they say it is, then you'll simply have to use conduit to run the wiring between the boxes.
You'll also want to ask if they consider the cable "supported", by running it along the top of the cabinets. They may tell you that you'll still have to secure the cable/conduit with staples/clamps.
Aside from those minor possible issues mentioned, I don't see any problems with extending the circuit.
You should have only attached the white grounded (neutral) conductor from the cable leading to the other receptacles, to the grounded (neutral) terminal of the GFCI. The white grounded (neutral) conductors for the lights should be connected with at pigtail to the neutral feeding the building.
Unless you want to provide GFCI protection to the security light as well, then you'll connect the wires feeding that to the load side of the GFCI.

Even if your installation is grandfathered, you're not allowed to make a grandfathered installation worse than it already is.
However, kitchen receptacle circuits can certainly serve receptacles in the kitchen under or near a cabinet. Are you sure that low-voltage LED lighting doesn't come with some sort of power supply that plugs in?
