I'm putting in a bamboo floor and have a 20mm expansion gap around the entire floor. Against walls I will cover the gap with baseboards but what is the best way to hide the gap otherwise? One side of the very long room is floor to ceiling windows and patio doors so there cannot be any baseboards there. Ideas?

And, since you mention that its appearance is secondary, I'll throw out that you might be OK just filling that 1/2" gap with grout. On my first tile job I didn't notice that the edge of my fiberglass tub had a slight belly, and ended up with a gap that went from 1/4" at the middle of the tub (same as my grout spacing), to about 1/2" at the head and foot corners. I filled the gap with grout and it looked surprisingly good. When we moved after about 4 years there was no evidence of any cracking or separation between the tub and the grout; it looked pretty much the same as when I first installed it.
EDIT: Another possibility would be to fill the gap with a length of aluminum bar stock to match the threshold. You could remove the threshold and fasten the bar to its tile-facing edge with countersunk flat head machine screws and nylon-insert locknuts so that the screw heads are hidden in between the tile and the bar. Assuming the cement board is butted right up to the threshold, you'd probably need a 3/8" square bar mounted high on the threshold so it overlaps the cement board.
You can but the if its an exterior facing wall you'll likely cut the vapor barrier if you don't use the proper tool. I recommend the Fein Multimaster for this. It has a depth stop gauge attachment so you cut just enough of the drywall without penetrating all the way through. The segment saw blade is best for this. A ton of companies are making knock offs of this tool that you can find in big box stores now so they may work too. Fein is going to be more expensive but it lasts decades.
Another option to consider is to just pull out and replace all the baseboards with something thicker and looks better than what you have now. If you choose this option heed my advice and pre-prime, if not already, and pre-paint all the boards with no less than two coats before installation. You'll still have to apply a final coat after installation to cover nail holes, but you can go extremely fast because you've already pre-painted.

I had a similar situation when I redid my basement - couldn't put baseboard in to hide the gap between the doorway and the laminate flooring at the entry door. The most common solution I've seen in images I found on the web and in my chosen home improvement store was to use color coordinated T-moulding along the doorway right up against the bottom sill. I'd add an image, but I don't have one handy, alas.
