I have a 1/2" copper pipe which has a 1/2" nom compression x 1/2" OD compression stop on it. I'd like to be able to put a 1/2" barb fitting to connect this to a hose.
I can't find anything which would screw onto the male threads on the valve body to get me the barb?
What are my options?
Assuming that your HWT connections are 3/4 MIP and starting from the tank working back the the pipe at the wall:
(No need for valve as the valve on the cold will isolate the hot)
No need to use these particular brands, they are just the first ones I found. All items should be available on Amazon or a local hardware store.
I'm no plumber, but here's a thought...
Compress a copper nipple onto the shower valve. Now instead of the adapter you made, install one of these into the wall:

Now, place the other end of the nipple (already attached to the shower valve) into the compressed end of that fitting, and to lock down the nipple you will be tightening in the same direction as the threads going into the wall. So basically you end up with a compression fitting on both ends of the nipple.

There are no options short of removing the compression stop valve and replacing it, or putting in a short piece of 1/2" OD tubing connected to a new valve with a barbed outlet. threads for compression fittings are not designed to hold any pressure themselves or to mate up to anything other than the compression nut designed for them.
