The faucets on my laundry tub need to be replaced. I'm trying to figure out how to shut of the water supply to the hot and cold lines. There are two valves(maybe?) inline on each of the water lines right above the tub (shown in the attached picture). Are these shut-off valves? If not, what is the purpose of these? I don't see any other shut-offs on these water lines between the tub and the main pipes that go along the ceiling.
It is natural to have some water hammering when you had your water turned off for a day and turn it back on.
You probably had a sink on or something so that when you turned off the water the excess pressure pushed it out somewhere - not your shower. So your waterlines are filled up with air. The air has to go out places and will create huge air pockets that will make noise when moved. Turn on your water supply and turn on everything for a few minutes and it should quickly go away.
The power to the softener is only used to run the backwash and recharge cycle. It will continue to operate without power, and will even continue to soften water for a while (though it does eventually need to be recharged, depending on the hardness of your water and how much you use).
Certain types of bypasses can be used as shut-off valves.
A custom-built one with 3 valves is easy: just close all valves.
There's a type with two valves that can also be used: close one (so the valves are in opposite directions).
Other types that only have one valve/control handle don't shut off the water flowing through them.
Separately, you should have a main-shutoff that is reliable. If you have a leak in your house it will likely cost much more than a valve will. Install a ball (quarter turn) valve, rather than a globe or gate valve -- very reliable, and will easily last at least a couple decades.

Shut off the main valve (stopcock) for the building. If necessary drain pipes. Or
Buy a pipe-freezing kit. Prepare thoroughly. Have a plan B. Work fast.
