My toilet seat hinge busted, so I'm replacing the whole thing. It's a Duravit Starck 3 seat. I'm trying to remove the old hinges, which are screwed into plastic things that are a permanent part of the toilet itself (there's no way to get inside/underneath, new ones were not supplied). The problem is, as I turn the screws on the old hinges, the plastic things just rotate in the holes so I can't unscrew them. What should I do?

The toilet connections shown depend on rubber gaskets to make seals. These seals likely need replacement. In addition, I see that PTFE (white colored) tape was used. It should not be used for these fittings (or any compression or flare fittings), and can cause leaks.
Disassemble the connections. The top leak is likely caused by the washer (inside the toilet tank) not being seated correctly. The gasket should have come with the replacement fill valve. The tank should be cleaned at the location where the gasket sits. I can't tell for sure, but the nut holding the valve onto the tank looks a little bit undersized. It should completely cover the hole in the tank.
The metal flare tube also needs a washer in order to mate with the fill valve. This washer should be replaced. I would tighten it hand-tight plus 1/4-1/2 turns. In addition, the nut should be cleaned of the debris visible in the photograph.
Another reason could be that the tank was cracked. Sometimes, hairline cracks are very difficult to see, but are able to produce leaks.
You need to identify the toilet. There is often a brand logo under the toilet seat, between the bolt holes.
That said, it appears to be a Duravit “darling new” wall toilet. There are two or three models within the range, each gets its own seat/cover. Measure the length of the top of the bowl from wall to front edge and it will correspond with the spec online at www.duravit.us. It looks like the elongated version which probably uses toilet seat 0063390000, but you should check.

It looks like there should be a bolt with a hex-head that you unscrew using a spanner (wrench) to replace the hinge mounting (the hinge itself appears to be integral to the seat).
It's a designer toilet, designers tend to prioritise visuals over practicality.
If you put some pulling force under part 4 (e.g. lever with a screwdriver using a small dowel as a fulcrum) it might create enough friction on the (presumed) captive nut or insert to hold it in place while you unscrew the bolt.
