My kitchen has these fake bricks placed over the drywall on the walls around the cabinets.
My question is, is there a way to remove just the bricks without completely tearing down the cabinets and drywall and starting from scratch?

You can put it onto the drywall. You want it smooth and to not have a glaze, so you may have to sand it. If its been painted with a topcoat, you may want to paint it again with a primer.
Use mortor that is specifically designed for glass tiles, not ceramic tiles.
Adding a wall beside an island seems a major step backwards from current trends of open and airy interior architecture, which have been steadily embraced for decades. The obvious solution would be to add a drop down wall, or even just suspend cabinets from the ceiling, like this:

One idea to help integrate that into the kitchen would be to add beams over the rest of the room:
To do this right requires cutting some holes into the ceiling, tying bracing into the ceiling joists, and then repairing the ceiling. This is a medium sized job for a competent contractor, costing anywhere from $500 to $3000 depending on the scale and specifics of your house. As a do-it-yourself, it is perhaps $50 in materials plus the cabinets and 20 to 60 hours of effort, most of which is drywall work to match the rest of the ceiling.

You cannot remove this fake brick without damaging the drywall under. You will have to replace the drywall, best solution, or do one hell of a good skim mud coat over the damaged drywall. You can use a Rockwell Sonic Crafter or similar tool to cut the drywall cleanly at the edge of the cabinets. replace the drywall, mud it in, and paint. There is no easy way in this case.
