I recently bought a fridge that doesn't have an ice maker or water dispenser. I turned off the water under my sink that goes to the fridge line, yet I still find a puddle of water in the morning when I wake up. Is there an easy way to fix this issue?

The water line to the fridge is most likely 1/4" OD tube (either copper to plastic). It would connect to the fridge with a 1/4" Compression by 3/8" Male Iron Pipe Thread adaptor. If this is the case, when you go to remove the line from the fridge, loosen the compression nut until the tube can be removed from the adaptor fitting. The unscrew the adaptor fitting out of the fridge. Reconnect the tube to the adaptor fitting and screw a 3/8" threaded brass cap onto the end that was connected to the fridge. Use a little pipe dope or teflon tape on the threads. Turn the water back on and inspect the joints for leaks. Tighten as required if there is any drips but be carful not to over tighten the compression nut.
If this in not the case with your fridge, pull it out and take a picture of what you find.
I think kitchen sinks are 3/8" (but I can never remember). So you'll want a 3/8" female, 1/4" male, 3/8" male tee. You should be able to find one at the local big box, or hardware store.
Something like this
- Shut off the water using the shutoff valve.
- Remove the existing supply line.
- Attach the tee where the supply line used to be.
- Connect the sink supply to the 3/8" male outlet on the tee.
- Connect the refrigerator supply to the 1/4" outlet on the tee.
NOTE: Use your preferred pipe dope method (tape or goop), however, since it's a brass fitting dope should not be required.

You have two possible leak causes, so you need to separate them to figure out which one it is.
I assume the line to the old ice maker is still running behind the fridge. Rather than just shut it off under the sink, disconnect the line under the sink and put a tray under the valve to catch any drips.
The next day, check the tray for drips. If the valve has been leaking, you can cap it off or you can replace the valve with one that doesn't leak. A cap is going to be cheaper and faster if you don't intend on using the ice maker line in the future.
If there are no drips in the pan, but still a puddle under the fridge, the fridge is probably missing it's condensate drip pan, especially since it was sold from an outlet store. It's normally a plastic tray that slides under the fridge. Water drips into the tray periodically and then evaporates. If theres no tray the water can flow out from under the fridge and make a puddle. The outlet store should be able to confirm if your fridge requires a drip pan and probably help you order a replacement (tho you may have to pay for the part).
