I have a Whirlpool Refrigerator model ED5VHEXVB00 and right now I have a low water pressure coming out of the water dispenser. The water filter needed to be replace this month and the light just turned red so I bought one and replaced it thinking that this might have something to do with the problem. After replacing the water filter I still have the same problem. Water pressure is very low and is making very thin ice cubes.

You can reduce flow to the fridge by tightening the valve that supplies it. Trace the water line from the back of your fridge to your plumbing. If you find a valve that looks like this:
you can simply turn it clockwise a bit to restrict the flow. If you find a saddle valve like this:
then you will not have much ability to adjust flow at the valve. Your best bet then would be to replace the saddle valve with a proper tee and new valve with a compression outlet. While normally I'd recommend ball valves (sometimes called quarter-turn valves) for durability, they are not great for limiting flow, so here a multi-turn valve would be better.
When you talk of bad flow at the refrigerator ice maker I am assuming you are looking after the fill valve of the fridge .. because an open ended copper pipe should flow plenty of water - if the pipe has no restriction (clog or kinked).
If that is fine and you are checking at the fridge valve:
- Fridge Valve is defective partially sticking.
- Fridge Filter Cartridge is bad or defective.

Many times the problem you are describing comes from a saddle valve a small valve that punches a hole in the existing pipe. These valves are notorious for getting plugged and leaking. The best fix would be to install a T And a shut off valve at the location because in a few months or years most saddle valves start leaking.
