How can I fill this gap in my diy shelves? I’ll be using wood screws to secure the shelf.
The gap’s less than 1/4”.
I was thinking of using pieces of wine cork to even the weight.

I'd use plywood with a thicker piece of hardwood glued onto the front edge. This gives you very good strength. Here is an online calculator I use to find what kind of materials you can use and the amount of sag you will have. Here's a good quote from the author of the site.

Buy a small bag of concrete floor patch: it mixes like pancake batter and sets a light gray. This is what you fill that gap with. It gets hard as concrete and will adhere to the existing stone. If you don't want it to stick to the wood then mask off the wood before. It also helps to protect the top of the wood with masking tape. If you need more of a curb effect form at the edge of the hardwood with the propped height wood strip and remove when patch is dry. I have a picture of something like it:

If you pilot the ledger piece, when you add the screws to hold it down the shelf should draw down to meet it.
