In brave new world trade routes have been completely reworked and a caravan or cargo ship unit is now needed to maintain a trade route.
Every few turns the trade route needs to be set up again, optionally going to a different target.
Is it possible to set a trade unit to keep going to the same target until told otherwise, so it doesn't ask for a new destination every few turns, requiring less micromanagement?
Yes, you can see the trade routes by enabling the Trade Routes option in the map options, the same place you enable Resource Icons, Yield Icons, and the Hex Grid. Screenshot below shows a trade route leading north-northwest out of Salvador. Because I'm playing Brazil the line is green and it's hard to see it on the map, but you can see it best underneath the red Austrian scout unit at left. The little arrows are animated. The routes are also visible on the strategic overview map.
In addition you can also see trade routes by hovering the mouse over a trade unit. I've only seen this when looking at another civilization's ship, I'm not clear if you can get this type of display for your own trade route units. This one looks to be the same graphical effect as the video you posted.
Take the trade route between Te-Moak and Milan. It is earning me 19.8 gold, and it is earning Milan 1 gold.
If you hover the city names you can see an exact breakdown of how this is earned and how it is divided between the two parties.

No this is not possible. It may become possible in the future with use of mods. But as it stands now, the game does not have this functionality.
