Recently while watching the replays of other players raiding my village I've noticed their giants are just dropping into the middle of my village without breaking through my walls. I've seen goblins doing this too, how are they doing this?

tl;dr: 4 x Level 7 Army Camp (55 troops) + Level 4 Clan Castle (25 troops) = 245 troops
It is possible you are thinking back to an older limit, but 245 is the new limit. You don't have to do anything fancy to get 245, just max out your Army Camps and Clan Castle. The level 7 Army Camp which allows 55 troops was introduced in the Winter Update version, so possibly you are thinking back to a time before level 7.
Also, I believe there was an undocumented change with the 3.54 patch which started to include the Clan Castle deployed troops in the overall troop count. This means you will see 245 + the CC banner, but the banner doesn't mean 25 more troops it just tells you the opponent deployed CC troops (so the total is still 245).
I was able to find out there is a loot multiplier for when you attack someone in matchmaking. The loot gained is affected by the Town Hall difference between the attacker and the defender.
Players get increased loot for attacking Town Halls of a higher level, and reduced loot for attacking Town Halls of a lower level.
Example: If an attacker has a Town Hall level 9 and a defender has a Town Hall level 8, only 90% if his total available resources is considered lootable.
Note: Matchmaking isn't set up by Town Hall levels, it is based on total trophies the opponent has.

If your walls aren't very close to any other buildings than that's totally possible. There is a single space around each building/wall that keeps things from being deployed next to it. You can place buildings up to 2 squares away from each other and prevent placement, any farther away and your enemies will be able to deploy right in your base rendering your walls useless.
Example:
The third line after the wall in the second example would be available for deployment. When you are in placement mode, there is a highlight around each building/wall that shows it's protected area, any location that is not highlighted is available for deployment.
