My friend and I have been doing horde on insane but we do sets since I can't stay up late. For example, we did waves 1-16 first playthrough. Does this mean if we keep our pattern up we won't get anything for completing all 50 waves?

Yes, you can get the achievement this way.
You can check your progress in the stats page from the main menu, although this will only show your progess in 10 wave chunks. For example, if you manage to complete wave 40, in the stats page you will see 'Wave 31 - 40' with a tick next to it. You can then complete wave 41 to 50 on another play through to get the achievement.
There is, however, a ribbon that you can get for completing wave 1 to 50 in one sitting (this is separate from the achievement, so you can view it as an additional challenge):
- Long Hauler – Completed all 50 waves in one session
I found this table here and here. Not sure how legit the numbers are, however I did a bit of Googling and found various sources saying that level 100 is exactly 3,851,750 exp.

No, you will unlock any achievements/related rewards at the end for having completed all 50 waves, regardless of whether they were done in one go or not. You can select a wave to begin from during the horde set-up menu.
