Is there anything useful I can do with my unwanted items other than to dispose of them?
I know there appear to be no concept of money like in RE4 and RE5 but can I exchange them for skills points somehow?

Firstly, there does not appear to be any indicators when you are nearby one - this is part of the challenge.
Collecting them enables you to unlock "files and figures" which can be viewed from the main menu in Special Features > Collections.

And to answer your final query, see below for what one looks like. In order to "collect" an emblem you need to destroy it, this can be done by shooting it, or you can save some ammo by using a knife attack on the closer ones.
The smaller white blocks are your stamina. They only deplete when using melee attacks (and quite possible only when they connect?), including counter attacks.
Essentially they limit how much ammo you can save by beating zombies to death!

Items can only be shared in split-screen. In all other modes, items can only be trashed once your character picks them up—not traded, dropped, or cashed in. The function of trashing is to make more space in your inventory, and once it's gone, it's gone forever. Co-op drops are separate and unique, so you can't even save "your" herb for your partner (or vice versa).
