After paying to unlock Malanya, the Horse God, you can revive horses that you had boarded that have reached a state of no longer living. Is there some kind of limit on how many horses are available to be revived? For example, if I've had 2 horses die, can I revive them both? What about 10? and 100? 1,000?

As far as I can tell from my testing, items will stay on the ground indefinitely as long as you're close by. They only despawn when you're a significant distance away.
As a test, I dropped an item on the ground in a safe area (a stable), then left the game running while I made myself some lunch. When I came back about ten minutes later, the item was still right next to me. This is evidence that there is no time limit for items despawning.
Another time I killed a Hinox which dropped some strong royal weapons. At the time, I could not carry any more weapons, so I walked a few hundred feet to kill a nearby Lynel. After killing the Lynel, I went back to where the royal weapons had been, but they were nowhere to be found. This shows that distance affects when items despawn. However I have not done any tests for how far you need to go before that happens.
Though the breadcrumb idea is clever for navigation, I suspect the mazes are a little too big and that items will begin to despawn as you traverse the narrow corridors, which may get you even more lost than you started.
There are 2 currently confirmed endings to Breath of the Wild:
1) Basic Ending:
This is the easier of the two endings, and is achieved upon defeating Ganon's true form, without having completed all of the side-missions and extras throughout the game.
What happens:
Zelda appears, and seals the evil away. Before the credits, Zelda asks Link if he truly remembers her. the credits then roll.

2) True Ending
This ending is unlocked by collecting all 18 of Link's memories.
What happens:
It is caled the "True Ending" because the basic ending is an "incomplete" version of this ending. After the credits roll and shows Link and Zelda together again, in their Hylian garb, looking upon a Hyrule that’s full of life and devoid of any evil forces. Zelda’s work isn’t done though. She’s going to work to keep the peace and make sure that everyone’s prepared for the next time Ganon decides to show up. She’s rebuilding the kingdom and ensuring that nothing so horrible ever happens again. And she intends to do all of this without her powers which have gone dormant after Ganon was sealed. She smiles, content with her being without any extra abilities as she and Link set out to ride their horses to the Zora Domain to take care of Divine Beast Vah Ruta.

After doing science on several horses, I've concluded that the horse god will only remember the last 5 horses that have died while registered.
First, I had 1 horse that had died honorably in battle.
Next up, add a horse to the list.
New horse is added to the bottom. Good to know.
After 5 new horses, the first horse is no longer available to revive. Note that this menu does not scroll. Also of note, horses are listed in order they died, not alphabetically or any other way.
After 5 more horses had fallen to science, all 5 previous horses had been removed as options.
Conclusion
In total, 12 horses had fallen (11 intentionally fed bombs) and a max of 5 were available to revive. Those 5 were the most recent, not the best stats or anything like that.
As a side note, the horse god had some unique dialogue when trying to revive a bombed horse, but never brought down any wrath.
