Monsters and bosses have health in terms of hit points (HP). But Link has health in terms of hearts, which can be lost at an increment of a quarter-heart at a time.
Is there some relationship between these two health standards? Does 1 heart equal 10 HP or something?
According to the IGN Wiki, there are 120 Shrines.
I'm not sure if there are any indicators saying if you missed one in a region (if there is a stats menu, I would check there), but IGN also has an interactive map that you can filter on to show just the Shrines. You can find the map here.
All buffs come in several stages. Look at these icons on your inventory screen:
See that line below it, how half of it is light grey and half of it is dark? That means you have a "level 1" buff out of a maximum two. Other things like Movement Speed have three segments like this.
Both equipment and consumables will add to this buff meter. There doesn't seem to be any added effect if you exceed the maximum.

Each quarter heart is worth 1 HP. This means one heart is worth 4 HP, and once you max out your health capacity, you end up with 120 HP (30 hearts).
This might not sound like much, but remember that you have some damage mitigation that most enemies don't have. As detailed in this answer, each point of armor you have reduces incoming damage by 1 HP (1 quarter heart), and defense elixirs can add up to 24 armor to your stats. The fact that you can stop a battle to eat a four course meal also helps keep your health up.
