I have personally come to the conclusion that overlapping is bad, anything else is fine and dandy. As a test I had ten fishing huts along a river, but none of them overlapped, and they all produced (roughly) the same amount of food, showing no decline as the river went on.
As soon as I overlapped them however, it seemed to decrease the production instantly. As such, your best bet is to simply spread everything out to make certain they do not overlap.
Also, make sure you do not chop down the forests around your hunting lodges, as the forest is important for its productionrate.
Using the Town Hall statistics, you can see how much food your population is consuming (and producing) each year. As far as how much EACH person needs a year, you can divide Used over the last year by total population to get an estimate. It's not exact, because people are born / die during the year so the population number fluctuates, but I get just over 100 food per citizen using this method.
To access the Town Hall statistics, build a town hall, click on it, and select the Production tab.

Since the answer of "How much food does a person need each year?" was derived by dividing total population by food consumption, there's no reason to believe students or children consume less food. DeadMG confirmed the same number from his own calculations, and given that his ratio of adults/students/children is likely to be slightly different, it's safe to conclude each citizen eats the same amount.
