As a new Altmer, I read some tips for newbie players and joined the Fighter and Mages guilds in Vulkhel Guard. The hints also recommend joining the Undaunted guild, but I can't find it.
I haven't been to towns other than Vulkhel Guard and Kenarthi's Roost, so I don't know if they were removed from the game or only have branches in some more advanced city or the PvP area. How do I find/join the Undaunted, if they are available?
The option is a bit hidden; obviously so you don't do it by accident.
It's quite easy once you know it:
If you're an addon user, you can use Quest Map. This addon shows every location of a non-completed quest on your map.
For me, this is the most easy way to complete the quest achievements.
The black marks are uncompleted. The white ones are an additional addon setting so that also solved quests are shown on the map (which I won't recommend). So this addon also fits into the ESO standard color scheme of something solved or not.
Bear in mind that this may reduce immersion, if this is important for you!
A little flaw: Even following quests are shown as non-completed symbols. This means that if you go to a black exclamation mark and you can't find a quest giver that you first need to solve the required quest in first place.

Aldmeri Dominion characters can find Turuk Redclaws in the Salted Wings Tavern in Vulkhel Guard to start the Undaunted quest for the region (which will immediately grant you the skill line, even if you don't pursue the quest right away).
If I recall correctly, he's on the second floor and there isn't much other reason for you to ever go up there, which could explain why you missed him.
