When I lose all my hearts in combat and I have a fairy in my inventory, it expends a fairy to heal me to full health. Sometimes, I don't want it to do that and I'd rather die and respawn. Is there a way to stop the fairy from healing me?

Spoilers, obviously.
To summarise, you go to an area called Eldin Great Skeleton. You will find this northwest of the Death Mountain, and right above Eldin Mountains. A group of tough enemies there have these weapons and they respawn after a blood moon --- so you can get an infinite amount of these, provided you can defeat them.
Just blow them up.
No, seriously. The ol' 'Dwarven Fishing Pole' is alive and well in Zelda: Breath of the Wild. If you throw a bomb into the water where the fishes you want are, and detonate it, they'll rise - belly up - to the surface. Then just dive in and collect your seafood at a leisurely pace, without using the dash button and swim to shore. You can even jump in multiple times as needed without any fear of losing 'The One That Got Away'.
Those fish ain't going anywhere.

Beyond releasing the fairies ahead of time, this is not possible. You can however disable the renewable ability acquired after completing a Devine Beast, which behaves like a super fairy, as noted by Seiyria:
Your only option to avoid using fairies is to manually load your last save, which is what a Game Over would offer.
