I added some tasks to a Carpenter's Workshop that I didn't want. I don't see any way to modify the tasks in the task queue. How can I remove these tasks?

He's likely to want a workshop related to one of the skills he already has.
Note that precursor making skills like weaving and mining relate to the workshop to which the production skill is related; a weaver will want a Clothiers Workshop; a miner will want a Masons Workshop; and a tanner, if they mood at all, will want leather works.
In a word? No.
There are a few caveats here (check the Status => Stone menu, for an example); but mostly you're just going to have to learn and remember.
Of course; very few jobs require special materials: most of the time the name of the job will tell you exactly what you are going to end up using. (Make stone cabinet, for instance, uses stone available to the workshop; and Craft iron helmet will use iron and fuel.)

Select the task and press 'c'. This will cancel the selected task, causing the artisan to drop any claimed materials that are being collected.
This works for all workshops.
