I played co-op a few times. There is an option if you want to continue playing in free play mode as well. I can see a "Yes" button but there is no "no". How do reject the offer?

The specialty buildings are permanent.
Keep in mind they all have a disadvantage too, they improve something and give a negative bonus to something else, so buy only those who fit your strategy!
As an extra limit, you can only have one of them active at any time, so if you buy a rifle range and a super monkey lair you can only have one active, and not both. You can change wich one in the menu. Changing specialty building mid-game is not possible.

Levels are shown as left path/right path. In a number / number, the first number is the base number and the second number is with the appropriate premium or specialty building. For example, Tack Awesomizer doubles the pierce for Tack Shooters and doubles the spiking of Spike Factories.

You don't technically say "No". You can just go back to the main menu and start another game.
There is no option to start a new map or anything either. You would have to create a separate new game.
