I tried to steal from a girl in Kingdoms of Amalur. But she saw me or something like that and now she's trying to kill me if I approach her. The problem is that she's important in a quest I was doing. Is there a way to apologize for the steal to an NPC? Or will she forget with time?

You can kill almost anything except main quest givers. Side quest givers are a hit and miss because the ones you ARE able to kill will have a fate-like essence surrounding them. That means they will revive. Some will never die and continue to revive and attack you. An example is the first city you get to in the plains where a side quest giver is collecting arm bands. Attack him and everyone else and you will see what I am talking about. Guards are also unlimited and always seem to match your level in some way. If you resist arrest it takes a very long time for them to cool down so to speak.
There are two ways to set the difficulty in KoA.
Start a New Game
When you start a new game, you get to pick the difficulty.
Realistically, you're not very likely to abandon your game every time you want to change the difficulty
From the Options Menu
Go to the pause screen, then the Options menu. The difficulty controls are under gameplay options, which you can adjust at your leisure.
There do appear to be some conditions as to when you're allowed to change the difficulty (it might be as simple as, "cannot change while in combat", but I haven't been able to verify when it's disabled).

1.) Reload. If you're a chronic saver (or if you stole from her shortly after fast traveling or entering a building) just reload your latest save (or auto-save).
2.) Run Away. Just run away. After 2-3 game days, all will be forgiven.
3.) Get caught. Just not by her. If there are any NPC 'guard' characters nearby just turn yourself in. Pay the fine, pay the bribe or serve your time. Then all is well.
