My girlfriend accidentally enabled hardcore mode in Minecraft, dooming herself to experience the ultimate frustration sooner or later on her first playthrough. Is there any (presumably non-legitimate) way to disable it?

Here's a quick how-to:

Download NBTExplorer (if unsure, get the ZIP file).
Unzip/install, and then run (make sure Minecraft is closed).
Click Open NBT Data Source and select %APPDATA%\.minecraft\saves\%WORLDNAME%\level.dat (you can copy-paste the %APPDATA%\.minecraft\saves part into the address bar).
Expand Data, double-click hardcore, enter 0, click OK.
Click Save All Modified Tags.
Voila!

This also works for Macs now.

If you're willing to carry a door on you, the quickest shelter you can throw up is to just dig a 1x2 hole into the side of any hill and throw down a door to seal it off.

If you don't have a door I suggest the following:

The key thing here is that by being off to the side you aren't in range of arrows, but you still maintain a path to light so you can see the sun up (you can also listen for music, but I often disable sound). You close off the entrance with single rocks so you leave a 1x1 path which zombies can't come down.

No, this is not possible in an un-modded, single-player game. There's certainly nothing you can do to a map file to force constraints on the player playing it.

Given that people have been playing adventure maps for ages without the special mode, trust has worked very effectively up to this point :-)
