I want some leather but i could not spot some cows or some rabbits

You can get leather through the following ways (besides Rabbits and Cows)
0-2 Leather from killing Horses/Mules/Donkeys
Foxes have a 20% chance to spawn holding Leather, and has a 8.5% drop chance (guaranteed drop on Bedrock Edition) when killed. Alternatively you can trade food to make it drop the leather without killing.
0.5%-1.2% chance to obtain when fishing.
Next update (1.16), you can:
Barter with a Piglin with a 9.43% chance to get 4-10 Leather per Gold Ingot.
start fishing and breed Mariculture Cod to smelt in the crucible smeltery to give 11% chance of leather per fish
build a grass pasture and hope for cows. remember to account for biomes. you can build the pasture in a mushroom biome and shear the mooschrooms that spawn as well.
build a Bloodmagic alchemy set and use 3 rotten flesh, 1 flint and a bucket of water. for 3 leather
Head to the nether and kill imps for their skins. Not recommended due to difficulty of the nether in AS.
here is a quick tutorial that will allow for spawning of animals if you are in the overworld/regular world!
get lot's of dirt and create a 24-30 block long walkway (1 wide is fine) out to a spot away from your island.
Make a 17 x 17 or larger square of dirt past the walkway you built. (More than 24 blocks away from your island)
(Optional) To speed up the process, place some grass blocks instead of dirt if you have some.
Wait for the grass to grow to the dirt blocks (Automatically), and when done, place torches around the grass to light it to a light level above 9.
Once all grown and lit up, animals will spawn, but you must be 24 blocks or more away for them to spawn! There is a max capacity of 15 animals in the square, and they will try to spawn every 20 seconds or so.
NOTE: Make sure the animals have 2 or more blocks of space above the grass to spawn!
