I'm trying to install WorldEdit, and I've done the following:

What causes this? (I'm on a Mac, if that's a factor)
Most places you'd normally enter a single block type in WorldEdit, you can instead enter one of these which will give you a random distribution of blocks instead of just one kind. You can specify which blocks and how often they should show up.
As an example, if you were to select a zone and enter the following command you'd end up with something like the following screenshot:
//replace grass,dirt 50%cloth:red,50%cloth:white
Note that you cannot specify a probability pattern for the blocks you are going to replace - only for what you will replace them with.
Assuming you already have the stone brick walls laid out, you just want a brush that replaces some of the stone bricks with mossy or cracked stone bricks. The below commands will give you a brush with a radius of 5 that exclusively targets stone brick (all kinds, including mossy and cracked) and replaces it with 70% regular stone brick (stonebrick:0), 10% mossy stone brick (stonebrick:1) and 20% cracked stone brick (stonebrick:2).
/brush sphere 70%stonebrick:0,10%stonebrick:1,20%stonebrick:2 5
/mask stonebrick
Just tweak the probabilities until you get an effect you like. You might want to make certain areas more mossy, or certain areas less mossy and more cracked, so play with it a bit.

If you have the option, enabling Time Machine from system preferences to create a full disk backup every hour is usually a good idea, and if you don't have the opportunity, you might want to consider getting an external disk and implementing that approach.
If that is completely out of the question for whatever reason, the alternative is using cron.
Setting up the interval running is easy enough, a simple man crontab should give you the information you need on that; but having a script to actually do the backup might be useful:

rm -rf world.bak
cp -r world world.bak
Save this as a "minecraft_server_backup.sh" and chmod +x it.
This particular script only keeps the most recent backup, and additionally, it doesn't actually check if the server is running before making a backup.

Due to the nature of worldedit, worldedit requires you to specify permissions, either the build in, or by using a permissions plugin
Worldedit uses the WEPIF (WorldEdit Permissions Interoperability Framework) to handle permissions.
If you're not using a permissions plugin, the easiest way is using Flat file permissions which allows you to simply give yourself all permissions by editing two files in the root of your server (same location as bukkit itself):
perms_groups.txt
perms_users.txt
(replace sk89q with your username)
