I'm level 6. All the gyms I find are held by players between level 21 and 24. How can I find someone of my level to battle, because it's not enjoyable to go up against these gyms – nor am I learning how to battle this way.

Yes, but not in the double battle style seen in the Gameboy/DS games. Both are battling in separate battles to reduce the prestige of the gym and thus take it down.

I would assume so, only because of the way I understand battling a gym as explained above. Both are trying to reduce the prestige of the gym.

No need to start at the same time because you aren't battling together as a unit. Just attacking the gym simultaneously.
I don't know for sure, but from what I witnesses last night, as long as the second(or subsequent) person joins while the first(or previous) is battling, they will be grouped into the same battle. Now I'm not sure if starting at the same time will cause a problem and create 2 "instances" of the battle. I would hope/assume not though.

I'm going to assume instead of battle you mean train. In which case yes, multiple members of the same team can train on a allied gym at the same time.

In the event that you and an ally remove the prestige from an opposing faction's gym, what dictates who places a pokemon there?
Whoever gets their Pokemon in first. If you're playing with a friend or someone on your team you might want to coordinate what you're putting in. If you think you and a mutual enemy took down the gym then you want to get a Pokemon in there ASAP to claim it.
Edit Note: Last night after defeating an enemy gym, 3 players put in 3 Pokemon immediately after taking down the gym. I wasn't aware you could do this. I thought you had to put in one, increase prestige, put in another, etc. Was this a glitch? And if not could someone explain this to me?
In Conclusion:
There is no special condition when battling as a team. You are concentrating your efforts with another player to reduce the prestige of an enemy gym or raise the prestige of an allied gym faster.

On average, there is a slight disadvantage to picking the weaker team, but not one that will completely affect your game.
For most of the game, your team affiliation will either not affect you (spawn/catch rates). There used to be rumors about giving you a perk for that team, but there's been no real evidence since. (Even after the game was reversed engineer to see more of the "gears", like how many steps to make a spawn call.)
The disadvantage comes from the lack of opportunity to earn the Defender's Bonus that Gym Leaders get for having a Pokemon at Gym. If you join a team that is the weakest in your region, then you and your team will have issues in holding onto Gyms. (whereas the teams with more members can statistically attack, take over, and fortify easier.)
The biggest takeaway though is that this is only an opportunity cost. The weaker team might be stronger a mile away, the stronger team might not frequent the area you are as much. The number of variables are unlimited as to that the weakest team might control all the Gyms of a city since their members are organized. There's no hard-set disadvantage, just a fluid difficulty curve.

Unfortunately due to the design of the game, people who start late are going to be at a massive disadvantage when taking gyms as the higher level players would be constantly taking them with high CP Pokemon.
It's likely going to be impossible for you to get 10 gyms until you get to a much higher level where you have access to higher CP pokemon. Due to the fact that the xp required to level increases by an insane amount at around level 20 and beyond, you could catch up somewhat. At around 20 - 25 you should be strong enough to defeat a level 2 or 3 gym easily by yourself.
Some things you can do to level the playing field at a low level is to consider the types of pokemon. You will want a Pokemon that takes reduced damage and deals extra damage to the ones in the gym. You can beat pokemon up to double your CP in this way.
Another thing to consider is dodging. Dodge when the yellow sparks appear and you can reduce or completely negate the damage dealt by the enemy pokemon. This makes it easier to defeat higher pokemon.
The final piece of advice is to team up with a friend or two. I've found that all gyms are pretty easy when it's 2v1 (total of like 12 v 2 or 3) as you are effectively doubling your attack (it also doubles your HP and the enemy's attack, but these two cancel out essentially, or you can dodge to negate the attack as explained previously).
