When playing for the first time today I noticed that I have to tediously click on every planet to see its resources and other information.
Q: Is there an overview of some kind listing all that information, e.g. on a per-system-basis?

There is a Feature called Automatic Exploration that is unlocked by the Physics Technology Automated Exploration Protocols. This will allow your Science Ships to explore the galaxy while controlled by AI (though it will still need a scientist, as I recall). It also increases your surveying speed by 25%.
The only prerequisite for this technology to appear in your Physics tech choices is that the current game year be 2210 or later. Here is what it looks like in-game:
After mashing on buttons for a while, I figured out a way to do this, though it wasn't intuitive, and for all I know might not have worked until I was already out of their system of control.
Rather than hitting "Stop" or trying to tell it to Survey the system it was in, I instead needed to issue a new "Move" order. The new "Move" order overwrote the command to send it home.

EDIT: There is also a toggle to make this viewable all the time, in the bottom-right portion of the screen (by the Map Mode buttons). Thanks to @SableDreamer for pointing this out.
