NPC names are saved as text in the world file. I'm not aware of any save editor that can rename NPCs at this point.
However: There are currently* 35 possible names for the Guide, and — one of them is, in fact, Brian. Since the name is completely random each time, there's no telling how many of the gentle Guides you'll have to mercilessly eviscerate before finally getting a Brian.
Although, at about the 24th slain Guide, your chances of having gotten at least one Brian will approach 50%.
Hex editing
If you really want to rename your NPCs badly, you can do so by editing your raw save file with a hex editor like HxD. This should go without saying, but make a backup first because it's very easy to fry your save file.
Currently*, the NPC names are at the very end of the save file. They're saved as strings with length prefixes, so edit the name to be whatever you want, then edit the byte before it to reflect the length. For example, "Brian" has 5 characters, so you'd edit the preceding character to be \x05
(ENQ).
The maximum length for NPC names is 22, and obviously they will reset if the NPC dies.

Personally, my loadout is as follows:
- Obsidian Shield
- Ranger Emblem
- Demon Wings
- Spectre Boots
- Philosophers Stone
I reforged my items to all have at least +3 defense each. Ranged damage might also be good.
My main weapon at the time was a clockwork assault rifle equipped with either crystal or cursed bullets. The splash from crystal and the afterburn from cursed work rather well against bosses.
Preparing for battle:
- Set your spawn point to a bed in the Nurse's room, with an extremely easy exit out back into battle.
- Obtain several of every buff potion that may have even the most minor advantage in battle.
- Go to a relatively flat location outside your town, just far enough that monsters spawn, but not too far to where if you used your magic mirror that the boss would despawn.
- Wait at this location until the 'night music' starts. As soon as the music changes, you can summon bosses.
- Just before or immediately after summoning the boss, press 'B' to drink all your buff potions simultaneously.
During battle:
- If you are missing more than 100 health and you can drink a potion, do it immediately. The health potion cooldown is quite painful, and restoring yourself to full health is better than waiting for the cooldown to wear off when you're at low health.
- If any buff potions wear off, don't hesitate to press 'B' again. Potions are rather expendable, so wasting a couple potions is much better than risking dying and losing the boss battle.
- Use the gravitation potion to your advantage. It is much faster and more responsive than your wings, and does not have a limit to how high you can go. Fighting in the air is much easier than fighting on the ground, as you have 360 degrees of maneuverability.
- If you are stuck with low health and potion sickness, use your magic mirror to head back directly to the Nurse to heal up. You only have a few seconds to do this before the boss catches up to you, so be prepared to heal and immediately jump back into battle. Be sure to take the battle away from your town if the boss does catch up to you.
These are the strategies I used to defeat the bosses, hopefully they work for you as well!

Any critter that is an insect can be used as bait. This includes worms, fireflies/lightning bugs, butterflies, grasshoppers, and scorpions. I generally go for worms followed by fireflies, based on how common they are while still having a decent bait %. One variety of butterfly is as good as Master Bait (50%), but it's rare.
Bait consumption is a random chance separate from rod and bait %'s. There is an accessory (Tackle Box) which reduces bait consumption chance, and I think there's also a potion that does the same thing.
Bait % is added to the rod's power %, similar to bows' damage being combined with the arrows' damage. The combined value affects your likelihood to get a higher-rarity fish and how quickly fish bite. I think some of the rarest fish are unobtainable without a high-power rod and/or high-value bait.
I highly recommend using a Sonar Potion while fishing. It tells you which fish is on the hook, so you can let the Bass just keep on swimming. It's crafted from bottled water + waterleaf + coral at a table with a jar on it.
It's worth noting that some fish are fished out of honey and lava instead of water, so give that a try, too!
