The Kingdom Hearts HD 1.5 Remix for PS3 has three games on one disc (Kingdom Hearts Final Mix HD, Kingdom Hearts Re: Chain of Memories HD, and Kingdom Hearts 358/2 Days HD [this one is actually just the cutscenes from the game]). When you put in the disc, the first screen gives you the option of selecting which of the three games to play. My question is, which game will show on my games played list if I just put the 1.5 Remix disc in? If I just watch the cutscenes for 358/2 Days, then will that be the only one of the three games that shows on my games played list?

Yes there are things that are missable, but nothing unique. There are no unique inventory items that are truly missable. While there was only one missable red trinity mark in Oogie's Mansion in the original KH, in Final Mix and consequently 1.5 HD Remix, that mark was moved to not be missable. As such, there are technically no missable items or trinity marks in Kingdom Hearts 1.5 HD Remix.
There are certainly loads of other kinds of missables in Kingdom Hearts. From various chests to whole worlds(100 acre woods), the game can easily be completed without doing or seeing many things and, after certain points, some of those things become unavailable. Some were modified for Final Mix. Here's the most easily found missable guide for KH, but it does not cover these changes for Final Mix. Note:
NO UNIQUE INVENTORY ITEM in the game is missable, not if you're thorough and complete each world.
That said, there are plenty of things in KINGDOM HEARTS (KH) with a single or a very limited chance of obtaining as the game progresses.

Kingdom Hearts 1.5 Remix Final Mix
Everything from Final Mix plus:
- Remastered in HD
- Couple new abilities (Zero EXP and Combo Master)
- Reaction commands for certain actions (triangle for things like opening chests)
- With the actions move, some commands moved to different slots in the action menu
- Improved Camera Controls
- Some model changes for some characters (to match models from other games)
Those are all the major changes, but there are lots of minor ones that are too long to really list out.

Actually, at least in my case, KINGDOM HEARTS 358/2 Days showed on my games played list from just putting the disk in and going to the main screen (WITHOUT having launched any game from the main menu). It seems like that game shows on your games played list no matter what and the other two games will only show if you choose them from the main menu.
