I have unlocked a few fences along the way in the Thieves' Guild but I can't remember who they were or where they are. Does anyone have a comprehensive list of all the fences in Skyrim?

The Cyrodillic Fighter's Guild from Oblivion does not return in Skyrim. Instead, you may want to check out The Companions, a group of soldiers, fighters, and mercenaries for hire.
Likewise, the College of Winterhold is the replacement organization for Cyrodill's Mage's guild.
The Thieves Guild is only a myth, of couse. But if it was real, I'd lurk around the city of Riften to find it.
Information is a little sparse since the game has yet to release in most areas, but all 4 of the main guilds are making a return in one incarnation or another.
The Rift is the Hold in the south east-most portion of the map. It's capital is Riften.
The Reach is the west-most hold of the map. It's capital is Markath.

Tonilia becomes a fence after the quest Taking Care of Business. She can be found in The Ragged Flagon in Riften.
Mallus Maccius becomes a fence after the quest Dampened Spirits is completed. He can be found in the Honningbrew Meadery near Whiterun.
Gulum-Ei becomes a fence after the quest Scoundrel's Folly. He can be found in The Winking Skeever in Solitude.
Enthir becomes a fence after the quest Hard Answers. He can be found in The Frozen Hearth, in Winterhold.
Niranye in Windhelm - owns a shop in the market just outside the white phial. Becomes available after the quest Summerset Shadows.
There is a quest you do for Tonilia where you gain the allegiances of the Khajiit caravan that wanders Skyrim. Afterwards they will also act as a fence for you, although this is less usefull than those listed above as the caravan's location is constantly changing. The quest isn't showing in my list of completed quests so I'm assuming it's a miscellaneous quest.
