[SalesForce] How to recover deleted data extensions from Marketing Cloud
Data extensions are mistakenly deleted from our Marketing Cloud instance. Is there any way to recover it? Thanks.

Sure. Data Extensions are only soft-deleted and are retained for a period of time. Create a case with Support to request re-instatement of the Data Extension that's been mistakenly deleted.
Unfortunately this isn’t supported as natively as you might want. Even on objects synchronised from Sales Cloud, fields that are pick lists in SC are only provided as text fields in MC.
You will need to do some custom configuration, where you create a separate DE, holding all the options for your pick list fields, and reference it in e.g. Cloud Pages, using LookupOrderedRows to populate drop down input field options.
If this is the use case you are in need of supporting, I can elaborate more on the solution if needed. If you need the pick list values to be available within MC, e.g. when working with Data Extensions in Contact Builder - I’m afraid there is not much we can do there.
Deleting a contact in SFDC will not automatically trigger a delete of the Contact in SFMC. Although there has been great progress in integrating these tools, such core concepts are still split.
Deleting a contact in SFDC should remove the contact from the Synchronized Data Extension, which means that you can cannot rely on the isDeleted flag to be set as the entire record would likely be gone.
Generally, I would say you have three basic options
Run a query to calculate which contacts are in your All
Subscribers (and MobileConnect Demographics and MobilePush
Demographics if you use those) compare with who is in your Contact
synchronized data extension. Then once every week/month you run a
manual delete request ->
