I am sending emails to my salesforce contacts using marketing cloud. For this I import contact in SFMC and then send the email. Now when a contact clicks unsubscribe I want to set the Email opt out field to be changed to true in Salesforce back. I want to keep my data in sync. What are the other options if I don't want to use the Marketing Cloud connector.

In my experience, the only way to achieve this globally (and without code) is to use the unsubscribe/resubscribe custom links. It sounds like you are already using this (included with the Installed Package). Even if you resubscribe the contact in Marketing Cloud, it will not share the update with the Email Opt Out field in Salesforce.
The Email Sends list will only populate with email sends made to individual contacts / leads. If it's added onto the page layout, you will see that Send Marketing Cloud Email link in addition to the Unsubscribe and View Analytics link -- that is the link which allows you to send to a single person.
All sends to Reports / Campaigns / Salesforce Data Extensions will populate in the Individual Email Results related list, which can also be added to any Lead / Contact page layout.

If you use the Marketing Cloud Connector, this will be done automatically. You can simply send to a Salesforce Report.
