I am going to have a surplus of 8 sheets of 5/8" 4×8 drywall (4 type-x, 4 QuietRock 525) until my next soundproofing job this Summer. I have been storing 8 sheets at a time stacked flat on my upstairs guest room floor, but I don't want to store the remainder up there until Summer. If I could store it vertically up against the wall wrapped in plastic in my garage, that'd be great. Any ideas on this?

Use the garage if you're worried about the floor's capacity. Place the drywall blocks on the floor first (the truck delivering the drywall usually has a bunch of these to protect the drywall and to make it easier to get the lift under the stack). On top of the blocks, put some plastic if you're worried about moisture in the floor. The drywall goes on top of this, so it's off of the ground. And on top of the drywall, you can put more plastic or tarp if the garage isn't weather proof.
Horizontal: Pros will fit top piece to ceiling first and cutoff bottom piece for a 1/4 to 1/2 gap at floor. The tapered joint is easy to fill.
You can also get a tapered butt joint by hanging the butt ends between studs and using a floating backer with a depressed center area that forms the "butt taper". They are available commercially or can be homemade. This is the easiest way to get a "dead-flat" ceiling (or wall) when only the best will do.

You could build a drywall storage rack.
A rack like this may be overkill for a short term storage solution, but could come in handy if you find yourself storing drywall for extended periods. It's nice because you can store the drywall in less space, it keeps the drywall off the ground/floor, and it prevents the drywall from warping.
