But when I peek inside. It doesn't look stainless, or maybe it's the rust sticking to the surface.
If a faucet is advertised as stainless. Is it stainless all the way (outside and inside)?

That is a difficult = expensive shape to make in stainless steel, so I doubt it is stainless. Solid chromium is never made as a product. The picture shows a gold color in the inside indicating a copper alloy. I suspect it is a German Silver ; a brass with 10 to 20 % nickel which makes it silver color ,no plating. These alloys are fine for water service. Do you have a problem ?
Durability - I have often seen the stainless/chrome plated hose breaking up after a few years... this is where the hose splits along the seam of the hose... This will not happen with the braided hose due to the fact that you have a netted sheath.
Also. the braided pattern is more flexible than its counterpart.
Cost - This hose is substantially cheaper than the corrugated style hose.
Ease of manufacturing and assembly: this hose can be crimped during assembly, the alternative is to use more complex and expensive screw clamps to assemble the unit.
You will probably also find the regular stainless braided hose like this:
I drew a small black circle around the area of that tab where you can slip a utility knife point underneath of it and pop it out it should come out pretty easily.
