I want to purchase a Hard copy of Civilization V. I would like this to contain the Manual and the flowchart that shows technological advances. When you try and look into this those items are rarely mentioned. They are not even mentioned in the Contents for the Collectors Edition. I know they exist because I have seen them on a demo on youtube. Also I believe the basic version is missing some Features/Civilizations. Does anyone know which version I need to buy to get a full version and to get all the literature that I mentioned please?

Did you configure it to be arid and old; or random for everything and just have a run of similar worlds?
You could explicitly set the World Age and Rainfall (from your description, the temperature could have varied a bit) to mix it up.
- World Age: Adjusts the map "smoothness", as a longer world has eroded more.
- 3 billion years: highly mountainous
- 4 billion years
- 5 billion years: flat
- Temperature:
- Cool: more ice, more tundra at lower latitudes
- Temperate
- Hot: more jungles, less tundra
- Rainfall:
- Wet: more forests and jungles
- Normal
- Arid: more deserts
Configure the settings to a younger earth (3 or 4 Gyr) and temperate or wet rainfall if you want to get away from what you're describing. You can do so on the "Advanced Setup" panel when you configure a game.
Don't belittle making patterns where there are none. It's a favorite unintentional past-time of the human race! (See: Gestalt theory).
However, Barbarians can only spawn in the "fog of war", as it were. It's completely possible that if certain areas are the only unclaimed areas on the map (meaning that all barbarian spawns must happen from within the area) and you have only a small military force ping-pong-ing back and forth between barbarian incursions, it's fully possible to spend many a fruitless turn chasing down recalcitrant barbarians.
Barbarian spawns can be eliminated completely when all of the passable land tiles are within view-distance of a civ's cultural borders. Without any area in the fog of war, the barbarians effectively die out.

What you may have seen on youtube was the Collectors edition artwork book
This is not the manual, but a picture book containing artwork related to the game. As far as I know, this edition was only produced as a once only batch when the game was released and it is quite difficult to find copies for sale.
