You can no longer craft the Golden Wrench (or rather, receive while crafting other things), and the 100 people that won it and another who bid on it are the only ones who ever will as it is not tradable.
From the original 100 & 1, at least 19 have been destroyed, 14 of which net $31,000 for Child's Play, another raised $530 for the same charity, and one more provided 10,200 TWD (~$344) for a 2011 Sendai earthquake & tsunami charity. Why people donated so much money to have someone destroy a virtual item is beyond me, but I'm not going to argue with results.

Most servers, however, rotate through multiple maps. This is perfectly fine and a good thing. Servers that play the same map 24/7 are more likely to have bots to help people who want a game on that map regardless of time and map, and are more likely to be part of a larger server farm that makes one such server for pretty much every single map out there. Those are hardly conducive to community building.
With no community, you don't have regulars. With no regulars, you don't have donators. Without donators, you don't get money to help offset your hosting costs.
To contradict with the above, however, if you really do positively need to play on a map and there's no such server out there... you can start your own! It isn't rocket science. From the main menu click on the '+' button, pick 'cp_fastlane' or whatever as your map, tweak the settings in the Game map if you need to, make sure you have proper port forwarding in place so people can connect to your server if you're behind a router and - hey presto! You're playing on Fastlane and now you just need... others to join you. Invite your friends or something. :)

As per the wiki, craft numbers apparently go into the thousands in some third-party backpack viewers and to get one visible in-game, you have to have crafted one of the first 100 of certain items or purchased one of the first 100 crafted because craft numbers above 100 do not appear in-game. I have yet to find a proper list of which items they apply to at this time, but it seems to apply to newer items.
It's tough to say exactly how high they can go, but since they are viewable into the thousands, beyond what is visible in-game, a fair guess would be based on the probable storage type for the number. Negative crafting numbers wouldn't make sense so it is likely unsigned. Since they go above 200,000, it's likely 32-bit which goes up to 4,294,967,295. There is always the possibility that someone arbitrarily capped it somewhere, but 4,294,967,295 seems fairly likely otherwise.
