Is there a way to get old updates on minecraft Xbox edition? I want to be able to play the minecraft xbox version of beta 1.6.6 for a non-laggy nostalgia rush.

You can't really even use the Xbox One without an account signed in (you can really only do basic stuff, but once you try to do something it will ask you to sign in), so the first time they played, they were logged in. I'm guessing when you turned the system off it signed out.
You want to go to the circled tile and select a profile to sign in.
Account doesn't mean Xbox Live. You don't need Live to play, but you do need an account/profile
Villager Farming is not possible on the Console Version of Minecraft as of version TU22/CU10.
Have a look at the changelog for Villagers. The PC version has the following entry, under 1.8 (14w04a):
Farmer (profession) villagers now harvest fully grown crops
Contrarily, this is absent from the changelog for the console version. In fact, villagers have not been updated since TU14, which is (very) roughly equivalent to PC version 1.3.1 according to the Version Overview.
