Once I've decided to use a VIP (accidentally), is there any way to get them out of the elevator? I selected an upgrader and don't want to use them yet. Am I out of luck, or can I do something to get them out of the elevator? I've tried using the Menu, and tried to maybe select another VIP from the lobby with no luck.

So I just couldn't resist and built a 3RD service floor and it finally let me collect my credit. The mission said only 1 level but it took 3. Thanks for the help guys
In short, stock piling helps with the imperial quests going forward. When you complete a quest, the next one may ask for an item that you have already stocked. So, in general, you will likely get paid back for those items you paid credits to generate. That said, you will do better in the long run building floors that generate credits as a means to make credits. And, if you are diverting too many credits to your inventory you will make less money over time.
In answer to the other portion of your question, many of the lesser items will re-appear in later quests, just in large quantities.

Sadly, no. At this time, there is no way to get him out of the elevator. I even put a VIP in the elevator (from the lobby), closed Tiny Death Star while he was still in there, re-opened tiny Death Star, and he was gone for good! [ :( ]
