I have a defined wave dataset. The object has a new field I would like to use for lenses, dashboards, etc. How do I update the dataset to incorporate this new field?

This is possible, SAQL has a cogrouping function which allows you to join two or more datasets together. This allows for both inner and outer joins.
Another option is to pull the data into Wave using a Dataflow, here you can use the Augment function however at the moment the types of join that can be done in the Dataflow are more limited, e.g. for multiple matches, the only option is the have the returned results in a comma separated list rather than multiple rows.
Filtering is possible in both the Dataflow and SAQL.
I would use the dataflow to join the datasets to the required form as far as is possible, and then use SAQL to join where the Dataflow does not provide you with the required type of joins.

The thing is Dataflow's json file needs to have two kinds of nodes - to digest sf records and to register them.
My json file now looks like this.
After a successful reload, now I can see dataset created.

I know this is a bit old but in case it could you or new users as I think there is an easier way now.
From wave you need to go to data manager, by clicking in the gear icon data manager
From there you go to dataflow & recipes tab and click in the dataflow
From there you need to click in the "arrow" > of where you want to add fields, and this will pop up a similar window as when you were importing the fields, if you click in fields you should be able to cherry pick the fields
