I bought a game very recently to play with friends, but I told them I already had it. When I add them, can they see the date I bought it, or does it only tell them that I own the game?

The recently released Battle.net Desktop App now includes the ability to chat with your friends if they are logged on to that same app, or any of WoW, SCII, D3, Hearthstone, Heroes of the Storm or Overwatch.
It is first come, first serve yes. Custom games can be anything, from normal melee to complex missions - so there is no real way to rank a player joining one.
And you can only observe public games that are set up with an observer slot built into the map.

Your friends have no way of seeing when you bought a game or even if you own it, but they can see your playtime and profile on some games (Diablo 3 and Overwatch are some examples from the top of my head) and realize that there's a discrepancy in your story.
